Figuring out what to eat can be overwhelming, especially when you just got off work and don’t have it in you to come up with something creative. But I know you’re sick of eating the same variation of chicken every week. Or maybe frozen pizza. Either way I’m sure you’re sick of it.
I can’t even figure out what I want to make for dinner, but for you I’m willing to dive deep into the depths of the internet and find quick and easy recipes you can use to spice up what’s on the menu for dinner at your house this week.
I’ll also make sure they pair perfectly with a glass of wine. Enjoy a delicious unique meal and a Tuesday night wine on us.
We found a great ahi tuna bowl recipe for you to try. Best thing about it? It takes a total of 20 minutes to make. That’s right, a unique dinner idea that won't have you slaving away for hours in the kitchen. It’s too hot for that this summer anyway.
- 1 pound sushi-grade ahi tuna, cut into cubes
- 1/4 cup low-sodium soy sauce
- 3 tablespoons toasted sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame seeds
- 1 teaspoon black sesame seeds
- 1/2 teaspoon freshly grated ginger
- 1 garlic clove, freshly grated
- 4 green scallions, thinly sliced
- 2 avocados, 1 cubed and 1 sliced
- 2/3 cup cubed pineapple
- 1 seedless cucumber, cut into half moons
- your favorite rice for serving, about 1 cup per bowl
- seaweed salad, if desired for the bowl
- tortilla chips for serving
Cut the tuna into cubes and place it in a large bowl. In another bowl, mix the soy sauce, oil, vinegar, sesame seeds, ginger, and grated garlic. Pour your mixture over the tuna and mix it to make sure all the tuna is coated.
Place the tuna in the fridge to chill.
Next, it is time to make the rice. Follow the cooking instructions on the bag of rice of your choice.
To make the bowl, place 1 cup of rice in the bowl. Cover it with cucumbers, sliced avocado, and a big scoop of the tuna mixture you made earlier and let chill in the fridge.
You can either enjoy it as a rice bowl, or as a dip and use chips to eat it.
If you're vegan, vegetarian, or just simply do not like fish, try it with tofu. If the idea of raw fish freaks you out, cook the fish, we won't judge.
